Ingredients
3 medium carrots
6 dates
1/2 cup of pecans or walnuts (optional)
1 Tablespoon Almond butter
1 cup oats
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
Instructions
- Cut carrots in thirds and throw in food processor. Chop until finely ground. Remove to a bowl.
- Add dates and nuts to food processor and chop until mixed, return carrots to food processor,
- Add remaining ingredients and process until a dough forms.
- Roll the mixtures into balls (if the dough is too wet you can add some more oats)
- Store in refrigerator for one week or freeze for up to 3 months
