Carrot Cake Balls

No-Bake Carrot Cake Bites -- a healthy, kid-friendly snack that is secretly packed with veggies and still tastes like dessert! www.superhealthykids.com


Ingredients

3 medium carrots 
6 dates
1/2 cup of pecans or walnuts (optional)
1 Tablespoon Almond butter
1 cup oats
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger

Instructions

  1. Cut carrots in thirds and throw in food processor. Chop until finely ground. Remove to a bowl.
  2. Add dates and nuts to food processor and chop until mixed, return carrots to food processor,
  3. Add remaining ingredients and process until a dough forms.
  4. Roll the mixtures into balls (if the dough is too wet you can add some more oats)
  5. Store in refrigerator for one week or freeze for up to 3 months
